Established in 2022, Sam founded the business with the main aim of helping local farmers in Devon and Somerset (those either selling direct to consumer or filling their own freezers) by offering a dedicated bespoke butchering service. Sam prides himself on being able to offer a very personal service, where farmers can tap into his knowledge and experience at any time. The main focus is always on returning the best quality product back to the customer.

Setting up a farm shop, selling meat via a website or social media direct to consumer, or even setting up a stall at a farmers market could be a fantastic way to generate a reliable extra income stream, in a time when the public are desperate to be more connected with how they source their food. By working with Sam, farmers can easily access a rapidly growing market without the need for expensive machinery, large fridges, employing staff and much simplifying the process to comply with local authority regulations.

why bespoke butchering?

All cut ups are completely customisable to suit whatever requirements you may have. After a discussion to understand your needs, advice can be given to create the perfect cut list, with a large selection of value added products available to choose from. Generating the best yield from the carcass is a top priority.

Services Offered

This price list will give a rough guide to the costs involved with butchering. Packaging and labelling, and value added products are all optional extras. Gluten free products and biodegradable packaging are available. For those wishing an even more custom service, seasoning and spice blends can be designed to create a product your customers cannot buy anywhere else. Sam has also partnered with The Wonky Horn Meat Co, to offer butchering from certified organic premises.

Beef

Carcasses will be dry aged, then butchered to customers specifications. All traditional cuts are available, as well as newer craft cuts. Trim can be simply minced or used to make burgers, sausages, kofta kebabs or meatballs of various flavours. OTM cattle can also be butchered.

Butchering is charged 40p-75p / kg dead weight depending on specification

Lamb & Goat

Lambs and goats are charged between £10-£20/ animal depending on specification to butcher for joints, chops, steaks etc. Easy carve leg joints, boning, rolling, steaking, dicing and marinading are optional extras.

Pork

Pigs are charged at £30-£40 per animal depending on specification. High quality handmade Sausages, burgers, stuffing, boning and rolling, preparing for charcuterie are all optional extras.

There may be a delivery charge for smaller deliveries further away from the Mid Devon, West Somerset area. However, this would be a last resort.
